What’s up with our name?


The word zeia (pronounced Zay-uh) has its roots in ancient Sanskrit.  Zeia  grain was a primary ingredient in the diet of the ancient Greeks and is probably the oldest grain in the world.  The Greeks believed that wheat was only suitable for animal consumption.  Zeia was rich in dietary fiber and protein as well as vitamins and minerals.  It was also very low in gluten, a protein found in wheat, barley, rye and oats which causes adverse reactions in many people. While the zeia grain used by ancient Greeks was only low in gluten, in keeping with our motto “Modern food inspired by ancient wisdom,” we go even further and exclusively use completely gluten free ingredients in our crusts.
